TAKES THE CAKE

Yesterday I attempted a cake that I totally made up!  It was super easy and very yummy!!!  I've seen a lot of those popular "rainbow cakes", but I'm not quite that brave to try one of those yet!  Besides Steve and I aren't either one that big of cake lovers, but we do like Angel Food Cake.  So needless to say, I cheated and used one of those as the base!  Instead of having colored cakes, I colored the frosting in between.  I added some fruit in the layers and made a frosting that I just kind of "came up with".  It was very light and refreshing!  Both kids and Steve ate 2 pieces, so it was definately a hit.  I made this one a more "tropical" cake with orange, pineapple and coconut.  Steve wants me to make a "berry" one for father's day, so I guess this was good practice.  Not sure how that one will turn out, but I'll give it a try!
